AMBER'S DARK TOAST WILD ALE
Collaboration with AMBER
Regeneration is the central tenet of this novel collaborative project between Amber, the leading light in Hong Kong’s gastronomic landscape and the city’s beloved local brewery Young Master. Marrying meticulous beer brewing with a culinary mindset, Amber Dark Toast Wild Ale combines upcycled sourdough bread with the brewery’s signature wild yeast fermentation program.
A full-bodied base of a malt-forward wild ale richly redolent of caramel, toffee and dark fruit was layered with subtle roasty notes reminiscent of an elegant Hojicha from dark toasted sourdough. Extensive ageing in Chardonnay barrels conveys complexity of vinous and vanillic notes balancing the natural acidity and rustic funk emanating from the interplay of wild yeast and bacteria.
