MIO

classic Belgian style Quadrupel - 2016

Inspired by Trappist brewing traditions, Mio is a whiskey barrel aged take on a classic Belgian style Quadrupel. It is full-bodied with a complex malt base giving it notes of caramel, toffee and raisins. The special yeast strain employed adds aromatic notes of spice and tartness. A long warm ageing period in the whiskey barrels brings all the flavors together, makes the body well-rounded and imparts notes of vanilla, honey and spice.

Tai Sui
太歲 - 2015-16

Sourdough Rye Ale

According to folklore, Tai Sui (太歲), was a magical monster that regrew whenever eaten. In essence, it was a little like a baker’s sourdough mother, alive with life forms from its surroundings. This bottle captures the life work of these beings in beer form. A take on a rye sourdough bread, this is a rye ale fermented using Gregoire Michaud's sourdough starter, which started in Hong Kong. It is dry, has a rye & oak kick with a touch of sourness and bit of funk.

RyeØ
(Rye Whiskey Barrel Aged) - 2015

Rye Beer

RyeØ is an intense rye wine, aged in freshly emptied rye whiskey barrels for 9 months. After the aging process, we hand-bottle and condition it with fresh batch of bourbon yeast for a second fermentation. We let the complex rye, oak and malt flavors marry over time and gain complexity. This is a labor, time and ingredient-intensive process, which means we can only make this special beer once in a while, when all the stars align. Individually numbered bottles will be available on a limited edition basis. Enjoy it now or store in your cellar for an extended period of time.
