Pale Ale

A true classic that won’t ever go out of fashion. The Classic is designed to be versatile – you can drink this all day and in all seasons. We’ve taken careful measures to create an elegant balance of malts and hops in this pale ale. The result is just enough malty richness, paired with a thirst-quenching blend of North American and Australian hops. We employ late additions and dry hopping to bring out its delightful fruity, floral and zesty.

ABV: 5.0%

Island 1842 Imperial IPA

IPA

The Island 1842 is an Imperial IPA designed for those who prefer a bold and powerful drink. Our goal with this beer was to coax out and showcase every nuance that our outsized malt and hop bill had to offer. This beer’s hop character is potent with additions in the first wort, constantly through the boil, at flameout and then generously during fermentation. In order to balance the strong hop profile, we built an appropriately robust malt backbone. The moment you pour Island 1842 into your snifter, expect a powerful nose of spicy, floral and zesty hops. The complexity of flavor will then continue to unfold with each sip and the flavor will linger on the palate.

Cha Chaan Teng Gose

Salted Lime Gose

A classic sour and salty Gose brewed with salted lime (鹹檸) commonly found in local Cha Chaan Tengs in Hong Kong and often served with lemon sodas. A perfect refreshing respite from the local humid weather, this beer will please beer geeks and novices alike. We kettle soured it with probiotic bacteria for a day, fermented it with ale yeast and matured with some salted lime.

ABV: 4.0%

The Rye on Wood

Rye Ale

If, like us, you enjoy the flavor profile of a well-made rye whiskey, then you will enjoy this oak infused rye ale. We use generous amounts of rye malts to give it a spicy, peppery edge, and balance it with a blend of caramel and pale malts. We then infuse and mature the beer with new American medium toasted oak. We like drinking this one neat, or with a citrus peel (orange and grapefruit work well) and a dash of bitters.

Summer of 1842

Session IPA

Summer of 1842 is an IPA usually only available in a cask-conditioned, real ale form at very select locations and occasionally in keg form. Prior to brewing and releasing this in Hong Kong, we brewed this recipe as a collaboration in the UK, the home of traditional real ales.

Bitter Oak

Hoppy Bitter

A take on a classic English bitter with added richness from a toasted oak infusion, this ale is reminiscent of real ales when casks were made of oak and not steel. Flavor profile has a rich and layered malt flavor profile with delicate hoppiness playing a supporting role.
