Honey Pilsner

Collaboration with Great Leap Brewing

Noble House is a collaboration between Great Leap Brewing, Beijing and Young Master, Hong Kong. A robust rendition of a classic pilsner fortified with local honey, this beer is generously hopped with Mosaic and Topaz. Followed by a pleasing nose of flowers and ripe fruits, this beer has a juicy and honeyed mid-palate complemented by thirst-quenching firm bitterness in the finish. The name is a tribute to the great James Clavell who penned the six-novel series The Asian Saga, with the novel Nobel House taking place in Hong Kong.

Brewed in collaboration with Cereral Brewing, fermented with a mix of both of our house American Ale yeast and Saison yeast and dry-hopped with Galaxy and Citra. Mango, guava note from dry-hops merge nicely together with clove and spicy phenols from the Saison yeast.

Collaboration with Pink Boots Society HK Chapter

Factory Girl is an Extra Pale Ale brewed with “Pink Boots Hop Blend”. This year’s blend includes Palisade®, Simcoe®, Mosaic®, Citra® and Loral®. Juicy and fruity but not overly tropical with more dominant citrus and herbal notes. Extremely balanced with bright golden color. A refreshing Summer brew for all beer lovers!

Asian Collaboration with Taihu Brewing, Great Leap Brewing, Boxing Cat Brewery and The Booth Brewing

一品鍋or 한솥밥 represents, both figuratively and literally a melting pot of diverse Asian cultures bottled in beer form. It is a single foeder sour ale fermented with a mixed culture of Brettanomyces, Pediococcus and Lactobacillus strains. It was then finished in Chardonnay barrels with ingredients from the homes of participating breweries including honey from the Great Wall, kimchi chillies and dried lime

The exclusive Dockyard Larger is brewed by Young Master in collaboration with the Kerry Hotel Hong Kong. Pouring year round at its namesake all-day venue at the hotel, it is an extremely fresh, unfiltered and unpasteurized craft lager. With a traditional Munich Helles style base, this beer has light malty sweetness paired with thirst-quenching spicy and herbal notes from American grown, noble style hops.

A collaboration with our friends at 18Grams, the Panama Fruit Bomb is a Coffee IPA designed to highlight the unique characterstics of its namesake coffee beans from the Finca Ziska plantation in Panama. It has berry like fruitiness and a peppery edge that pairs exceptionally well and balancedwith a blend of new world hops and a rich malt base.

Coffee Oatmeal Stout

Add Oil 加油 is a unique coffee stout brewed with malt that was roasted together with coffee beans, cross-infusing flavors right from that stage. We added more coffee as cold brew and tincture post-fermentation for a well-rounded coffee character. We used a blend of beans from Colombia, Mexico, Brazil and India to impart nutty and chocolatey background notes to the beer.

15th anniversary brew for the Crystal Jade restaurant chain using 15 Chinese botanicals: osmanthus, red dates, goji berry, chrysanthemum, rose, jasmine, da hong pao, pu-erh, yangmei, lu hing mui, roselle, zedoary, ginger, liquorice and chan pei. Find it at a number of Crystal Jade locations around town.

Buddha’s Hand Citron

IPA

Boxing Cat and Young Master have teamed up for the first collaboration brew of its kind made in one country across its two systems. Buddha’s Hand Citron is a potent citrus IPA infused with the aromatic Buddha’s Hand Citron and its name aptly derives inspiration from the symbolic hand gesture, “abhaya mudra” that represents fearlessness. It is generously hopped with warrior, summit, saphir and pacifica at every stage of the brewing process for a hop flavor that perfectly complements the refreshing aroma from the citrus infusion. Batch #1 was brewed in Shanghai at the Boxing Cat Brewery.

Four Leaves is second in a series of Citrus IPAs brewed in collaboration between Boxing Cat Brewery and Young Master Ales. It is a potent makrut lime leaf infused IPA generously hopped with Sorachi Ace and Equinox for an intense lemony, citrusy hop profile. Batch #2 of the Citrus IPA series was brewed in Hong Kong at the Young Master Brewery in Ap Lei Chau.

Pale Wheat Ale

Result of a unique collaboration with Renaissance Brewing Company of New Zealand, Siu Sauvin is an intensely aromatic Single Hop White IPA. We brewed it exclusively with Nelson Sauvin hops, which impart delightful floral and fruity flavor notes reminiscent of crushed gooseberries and elderflower. We built this “white-wine like” hop profile on top of an appropriately “white” malt base that includes a significant amount of wheat. This is the first collaboration craft beer ever brewed in Hong Kong and is a one-time only limited edition.
