JOB DESCRIPTION

Young Master Brewery is looking for an enthusiastic, hardworking, detail-oriented Brewer to join our dedicated production team in our brewery located in Wong Chuk Hang, Hong Kong.

As an experienced Brewer, you will be working closely with Head of Supply Chain, Head Brewer and the brewery team to execute the entire brewing process to ensure highest standard of products. Key tasks include raw material management, product development, brewhouse operation, cellar management, participation in packaging operations, as well as maintain proper brewery standards and reports.

Candidates should have existing brewing experience and be motivated to further develop their brewing career. This role will provide ample opportunities for the candidate to develop into a leadership role within the brewery team, eventually overseeing many of the brewing processes.

RESPONSIBILITIES & DUTIES

• Policy compliance: Comply with and enforce all health, safety, and personal hygiene policies and standards
• Process execution: Execute daily operations according to the Standard Operating Procedures, including but not limited to brewing ingredients handling, malt milling, wort production, cellar checks, cleaning and CIPs, beer transfer, beer packaging, etc.
• Team player: Collaborate with entire brewery team throughout the production cycle to produce quality beer and other products in a safe and efficient manner
• Product development: Work in conjunction with commercial team to develop beer products, including research and development, recipe design, existing recipe improvements, etc.
• Raw materials management: Assist head brewer in sourcing of raw materials required for brewing process and proper management of stock levels
• Brewhouse operations: Manage the brewing process including scheduling the brew, operating brewhouse equipment in accordance to safety guidelines, ensuring adherence to beer recipe, directing other staff to assist with various processes
• Packaging operations: Operate and monitor packaging equipment, including canning, bottling, kegging, labeling, and case-packing lines
• Equipment maintenance: Maintain equipment within the brewery and make suggestions about equipment purchases and upgrades if needed
• Cellar management: Manage cellar operations, transfer of beer between tanks, monitor fermentation process, and perform basic lab duties
• Cleaning / sanitization: Ensure daily tasks are performed in a safe manner and strict hygiene standards are maintained
• Record keeping / reporting: Ensure detailed records are kept and all paperwork associated with each duty with accuracy
• Client-facing activities: Provide training and technical support to clients, welcome guests to the brewery and conduct brewery tours, and represent the brand at events and client discussions

REQUIREMENTS & COMPETENCIES

• Strong team player with strong work ethics
• Excellent organizational and time management skills to ensure efficient brewing operations
• Attention to details and adherence to safety, environmental and brewhouse standards
• Good written and verbal communication skills in English
• Able to learn and develop across various functions e.g. brewing, cellaring, packaging, etc.
• Flexibility to work in a fast-paced and physically demanding environment (30ºC+ temperature)
• Ability to be on feet all day and able to lift 40kg+ weight.
• Ability to use pallet jacks
• 3+ year previous experience at a brewery as a brewer or cellarman is preferred
• Background in engineering with analytical problem-solving and mathematical reasoning skills is preferred but not required

Key tasks include raw material management, product development, packaging operation, equipment adjustment and maintenance, cellar management, as well as maintain proper brewery standards and reports.

This is an entry-level position; limited previous brewery experience required. This role will provide ample opportunities for the candidate to develop into a senior role within the brewery team, eventually overseeing many of the brewing and/or packaging processes.
