DAYS OF BREWING WILD

Released on the very special occasion of the 7th anniversary of our friends at HK Brewcraft, Days of Brewing Wild is an ode to the very origins of craft beer in Hong Kong. Based on the winning home brew from Brewcraft's competition two years ago, the base style is inspired by the Belgian Flander's Red tradition.

Eventually four different barrels of wild ale of different vintages ranging from 1 to 3 years were blended for the precise balance of fruitiness, acidity and sweetness. These barrels include a Napa Cabernet washed wine barrel, one previously used to age a blueberry sour ale and also one previously used for a California Chardonnay. Rich red fruits with notes of cherries, ume and raisins paired with delicate sherry-like oxidative notes. Heaps of coconut and vanilla notes from the American oak provide satisfying richness in one of the most complex sours we have released to date.
